A Career Change Turned Caribbean Brand: Kalbas®

Kalbas® is, above all, a family and creative adventure.

At the origin of the project is Claudia, a former art director who retrained as a chef after completing an intensive program at FERRANDI Paris. Her ambition: to make Creole and Caribbean cuisine more accessible through a modern, generous street food concept.

Her son, Méric, also from a creative background, quickly joined the venture to structure customer experience, service, coordination, and brand development.

Antony: The Caribbean Bowl Laboratory

The first location opened in Antony, within the creative third place La Padaf.

Over four years, Kalbas refined its concept:

• The customizable Caribbean bowl
• Homemade accras
• Sweet potato fries
• Reinvented desserts
• Fresh exotic juices

The venue — with its offbeat atmosphere, large terrace, and seating for more than 60 guests — became a true testing ground for warm, exotic recipes.

Customers came not only for the quality of the food, but also for the immersive experience and the sense of escape.

2023: Kalbas Moves to Paris 1 - Châtelet Les Halles

Building on this first success, the team opened a new location in 2023 in the heart of Les Halles, central Paris.

The more compact space (19 m²) was designed to optimize service speed and expand takeaway sales in Châtelet – Les Halles, particularly during lunchtime.

Caribbean Eatery in Paris: Between Restaurant and Takeaway

Driven by the enthusiasm of the Paris opening, Kalbas also developed its dine-in offering.

Today, Kalbas is recognized as:
